In tequila harvesting people seem to whack off the leaves with a shovel-like instrument to expose āthe pinaā (heart used for liquor). The equipment for processing looks fairly rudimentary.
It took a team of 8 800 hours to remove 85 m3 of agave green waste at the Castello Site (part of the Life Azores) project. This was estimated to be 10% of the overall agave biomass at that site, leaving 90% there to presumably spread again?
Using back of the napkin assumptions, 85m3 is the equivalent of 140ā280 plants, which could yield ~700ā1,400 bottles of mezcal-style spiritāenough for a pilot run, bottle sales, tasting room, and early branding.
