Ideas as I gather them:
-Cutting onions: cut laterally first, then vertically
-Blending: start blending slow @ first, then slowly ramp up speed

Wa Santoku —> rounded tip
Wa Gyuto —> pointed tip
Bunka —> less common compared to Gyuto, “reverse tanto” point
Nakiri —> flatter blade, popular in Japanese households (fruits, veg)
