The black salad @ndcmuscat I think it is called black salad because eggplants are called black in the Sudanese dialect. Please correct me if i am wrong 🙌 The Sudan is going through a severe civil war and crisis millions are displaced and thousands are killed. I urge you to keep them in your prayers. Ingredients: - 5 to 6 cloves of garlic - 4 chilies (optional) - 2 large eggplants - Olive oil - 1 tbsp tomato puree - 2 tbsps yogurt - 1 tbsp peanut butter - Salt & pepper - Parsley for garnish - Crushed peanuts (optional) - start by chopping the garlic chili and the eggplants. - fry the eggplants in a drizzle of olive oil for 5-6 minutes or till fully cooked and soft. ( you can grill them in the air-fryer) - Push the eggplants to the side or remove them from the pan. Add a bit more olive oil and fry the garlic and chili till fragrant. - Add the tomato puree. Yogurt and mix them. Then add the peanut butter. - once dissolved. Mix the eggplants in the sauce and mash them completely. - season with salt.
