you cannot switch to another visa from the WHV. As such, no options other than the end of the contract, returning home, and (if the company is willing to sponsor you and able/willing to apply for work authorization) apply for a work visa from Australia with a new contract.

The embassy explained that you can instead get an affidavit stating that you will leave France before the end of your visa period.
