Roasted Chicken with Parsnip Cilantro Puree
Recipe:
- 1 5lb spatchcocked chicken
- Seasoned with kosher salt, freshly ground black pepper, and ground coriander
- 4 tablespoons unsalted butter
- 1 large sweet onion, peeled and sliced thick
- 6 garlic cloves, peeled and smashed
- 1 1-inch piece of fresh ginger, peeled and chopped
- 2 medium parsnips, peeled and cut into large chunks
- 3 sprigs of thyme
- 3 sprigs of tar
