Roasted Chicken with Parsnip Cilantro Puree
Serves 2-4
½ cup neutral oil, room temperature
3 medium shallots, peeled and sliced thinly on a mandoline
10 garlic cloves, peeled and sliced thinly on a mandoline
2 lbs. (4 pieces) bone-in & skin-on chicken thighs
2 stalks(about 1oz.) lemongrass, tender white & light green parts, minced
2 red finger chilis, stem removed & chopped
