The final loaf from my @centralmilling trio. This one is straight T85, and a little over 10% WW (entirely from the lev). 85% hydration. I may have overproofed it a tad, but whatever. Love the flavor of this stuff!

SOURDOUGH GOLDFISH 🐟
Add 100g starter, 100g AP flour, 5g salt, 60g room temp butter & 225g shredded cheddar in food processor until a dough forms
Wrap & chill for 30+ mins. Rest on counter 20 mins & roll out 1/8" thick.
Cut out shapes & bake @ 350° for 12 mins.... See more
