El pulpo se adoba con chintextle, una pasta de chiles (mixe) con chapulines, muy utilizada en los mercados oaxaqueños. Ésta se unta en toda la superficie del tentáculo, cubriéndola hasta quedar totalmente rojo. Después se pone al grill unos minutos y se pasa a montar. Se acompaña con un escabeche de zanahoria y brotes de cilantro.🌶🐙📸: @maureenme
