Blueberry Buckwheat Breakfast Muffins
makes 10-12 muffins
Ingredients
1 cup cooked purple sweet potato
1/4 cup ghee
3/4 cup apple sauce
2 tbsp almond butter
1/4 cup maple syrup
4 eggs
2 tsp vanilla extract
1.5 cups buckwheat oats/hot cereal
2 tsp baking powder
dash of salt
1 cup frozen wild blueberries

Steam or bake purple sweet potato to cook until soft
