get 4 harvest of pea shoots before i compost pile it. harvest 1 early@ 2-3 ", second at 6" and prune roots and eat them also, 3rd stems still edible 4-6",4th and final 2-3" or stems too woody and roots are lovely. i add roots to noodles, soup, dips, salad, freeze well. i like raw best but mixed root soup makes a really flavorful broth....
