800–940 g chicken thighs, trimmed
2 onions, diced
3 peppers (any colour), sliced
2 large courgettes, chopped
2 tins chopped tomatoes (800 g total)
1.5 tbsp tomato purée
1 chicken stock cube
2 tablespoons oil
Spice kit of your choice
Pinch of sugar
Salt to taste

Prep the chicken
Trim fat, cut
